Can the mod(s) please post community rules? Ideally similar to what the subreddit has in terms of sources, description and length?

That would be great actually. Also, I was wondering what mediums of information are allowed, for example, can we post YouTube videos or link podcasts of cases or should we share articles only?

I would say at this point you can post whatever you like, as long as it’s on-topic and is intended to inspire a discussion. There’s so little content here that there’s no point in restricting what you can post.

can we put down some rules like not plagiarizing others’ work?

If it becomes a problem then sure.

/r/UnresolvedMysteries had a lot of rules because it was a big sub and needed to maintain the quality of its content. This is a very small, very new community so I’m inclined to let “anything go” (within reason) for now and the more restrictive rules can come if and when the community grows.
