Granted, water bugs have LEAGUES more meat on their exoskeletons then their land based counterparts.
Like that feels a bit weird to size comparison a centipede and a lobster, which is like 30 times itβs size.

Absolutely. Weβd definitely have centipede cuisine if they were the size of a lobster. People will eat anything.
