I’m looking for a solution to keep a local and searchable backup o 3 email accounts, including received and sent messages.
Is there any docker service that may do the work?

There’s something much better! Use the Synology as docker service and backup all of your data (or just mails) with „Active Backup for Microsoft 365“. That’s bullet proof and tested. Or use a real Synology with that package.
