Calendar and files are now out via izzyondroid. That makes gallery, files, and calendar now out.

This is the github org for Fossify: https://github.com/FossifyOrg
Each app has it’s own repo. Or as OP suggested, install via IzzyOnDroid.

I can find Fossify Gallery on F-Droid, but not the others, is there any way to access them without installing IzzyOnDroid ?

IzzyOnDroid is a F-Droid repo you can add it on F-Droid Client. Here it’s repo link: https://apt.izzysoft.de/fdroid/repo
You can get repo tab by going in Setting of F-Droid
