I currently use Unraid because I love being able to have diferent capacity disk and expand the array when I can unlike RAID and also you lose 1 drive you lose 1 drive data not all data like RAID, also you can get any disk and read it outside unraid like a normal disk, but recently I discovered this now can be done on linux followin this guide? Will it be like unraid?

I have been having some bugs with unraid for example each time the array start the webUI crash and I have to ssh and restart it, I just want a stable OS the has something like the arrays in unraid.

What OS do you use and why?

I only Ubuntu server and unraid.

I mainly use docker and only 1vm for home assistant so Im not interested in proxmox.

I use and vote Debian. Stable and minimal install out of the box.

Proxmox as main host, most guest VMs are Debian stable with a select few being Alpine

Linux but neither Fedora nor Ubuntu I would suggest. Fedora is not a good fit for server I believe and Ubuntu the worse Debian.
