I noticed that in other runs the knight just cuts his throat without decapitation. What interaction triggers the knight to cut off his head? I can’t find anything online about this.
I just finished my first run as hollow, however I can’t explain this.

Yes. I also thought it was the hollow state to trigger the animation but then I watched a hollow run on YouTube just to confirm and the statue didn’t lose the head. The game is amazing, details and secrets like this one are crazy.
