US Mobile or Tello are your solution if all you need is 2FA SMS codes. Both are eSIMs that are real phone numbers (no VoIP) and only $5 a month with unlimited incoming texts. Tello only works on WiFi/data while outside the US, but US Mobile includes roaming AFAIK.
If you’re looking to have data + an actual phone number (VoIP though so no 2FA) with calls and texts included in the countries you’re in, then Fonus Mobile is what you’re looking for.
P.S. Avoid Airalo even if all you need is data, waste of money. Plenty of other data eSIM providers out there that offer much better value for your money.

I don’t know how you do that as a DN and don’t get burnt out.
Regardless, just contact the place you’re staying at 15 days from now and ask them if they are willing to receive and hold a package under your name until you arrive.
I’ve done it before no problem.
