In fact, according to other articles, it seems that there are about 185 000 people of Polish descent living in Chicago (less than half a percent of the population of Poland), and a bit less than 10 million in the entire US (which is significant compared to the population of Poland, but still “only” about a quarter). And this article claims that there are “roughly 20 000 000 people of Polish ancestry living outside Poland” [in total], which is still less than the population of Poland.

You’re not wrong about the second half of your sentence, but it is quite common, unfortunately. Besides, I think the cow in the picture is meant to be representative for the entire meat industry, not just beef (other meats are still terrible for the climate, of course, just not as bad as beef).

Ich würde an der Stelle sogar noch einen Schritt weiter gehen. Es wird von Kapitalsmusfans und der weiteren Gesellschaft häufig implizit und manchmal auch explizit suggeriert, dass eine kapitalistische Handlungsweise, insbesondere Profitmaximierung um jeden Preis, ethisch gut sei und zu einem für alle optimalen Ergebnis führe. D.h., die Menschen klammern nicht nur die Verantwortung aus, sondern wenn sie eher naiv sind glauben sie vielleicht sogar, dass sie moralisch handeln würden, selbst wenn es erstmal ihrer Intuition widerspricht. Dann gibt es das Ganze auch noch abgeschwächt in der Form, dass Kapitalismus als das geringere übel bzw. das “am wenigsten schlechte” Wirtschaftssystem gesehen wird, was aber auch wieder indirekt impliziert, dass entsprechendes unmoralisches, kapitalistisches Handeln notwendig wäre, selbst wenn es unmoralisch ist, was es somit auch wieder legitimisiert.
