My absolutely favorite cold beetroot soup for hot summer! Tried it in Lithuania on my vacation few years back and it was love at first sip. It is called Šaltibarščiai (sorry if I misspelled something I’m not Lithuanian:)). It’s fantastic!

Heh, yeah the color is great and it usually gets darker shade of pink after some time in fridge.

The color kind of reminds me of Pepto-Bismol though I’m sure it doesn’t taste like Pepto-Bismol.
