I actually really miss, reading my subscribed subreddits. And it is definitely not about the platform. I think Lemmy is absolutely capable of doing exactly what reddid was doing for me. The problem is, that my communities are just not here. Web3 is about the people that make it.
I am all in for FOSS and federalization. Lemmy is perfect for that, but it feels empty to me. I will keep lurking and see, if some communities move away from reddit.

Change is uncomfortable. There’s just no way around it. And there’s nothing wrong with you feeling that it’s kind of empty here and not what you’re used to.
For me, it will be uncomfortable regardless. My preferred interface (RIF) is gone in 2 weeks so nothing at Reddit will feel comfortable either.
So I’ve chosen to embrace the discomfort of Lemmy’s newness and comparative “emptiness” over the discomfort of using Reddit’s inferior app, for a couple of reasons: First, Reddit turned on us, not the other way around, and second, because this place is relatively new it’s not littered with bots and spammers and trolls. The energy here is just better for me.
Even if all my favorite places and posters aren’t here yet, I’ll be here waiting for them when they arrive, and I’m the meantime, I’ll be doing my part to recreate what I used to love there, here.
My go-to app is RedReader and that one will survive the API changes apparently. But for how long? We will see where this goes. Nothing is as constant as change.

Lurking in hopes that others will come is futile. When they see no content, they’ll also just leave.
A lot of people moved to Kbin instead of Lemmy. Right now the Rexxiteers are split between 2 platforms: once Kbin fixes their technical issues and are federating again, should get a lot livelier.
mass adoption is the hardest part of any new platform. the best you can do is try to stay active so that when other users come, they don’t see what you are seeing, a ghost town. Lemmy has to get over the initial hump of not enough content driving away users. To do that, it needs active users. You can be that active user.
Are you sure there are no communities for what you are interested in? The search on your instance might be somewhat limited or show communities after a while, but you can use https://browse.feddit.de/ to find things you are interested in. Try alternate wordings, like stm32->mcu->microcontrollers->embedded, etc.
If the communities are really not here, maybe it’s time to create one? Advertise it around, find some mods, so you don’t have to moderate alone and it might turn out ok.

As to your original question, my subscription list was also a little bit thin a few days ago. I spent some time looking for communities, sometimes subscribed to “gaming” instead of “elite dangerous” and I don’t feel there is lack of content anymore. Also, since many communities are new, created by new users, for now we have to accept subscribing to 5 thematically the same communities on different instances. I think there will be a grassroots consolidation move soon.
