Not eating fast food slop today
that looks and sounds a lot like a Turkish dish called menemen. in looking it up, it seems to have cousin dishes going by different names around the Arab / former Ottoman world.
it is so effing good. genius pairing of tomatoes & other fresh summer veg, spices, and protein. add some bread to scoop, and it’s one of those single dish miracles that can be done on a campfire/cook stove.
I think one of the reasons “ketchup on eggs” is even a thing with some people, is like the cultural memory of a complex tomato sauce and eggs. like it is the weak descendant.
Now I am just thinking of Many Men by 50 cent but it’s a song about Turkish breakfast.

Thanks, it’s actually really easy to make. I chopped up an onion, bell pepper, green chilli pepper, and two cloves of garlic, sauteed them for a couple of minutes with paprika, salt, pepper and turmeric powder, then dropped in a can of chopped tomatoes, stirred to mix, made two holes in the sauce for the eggs, covered the pan and waited a few minutes for the eggs to cook. Topped it up with chopped fresh parsley, you can also add crumbled feta on top, but I had none left in the fridge so I skipped it. Takes like 20 minutes from start to finish and tastes real good. Shakshuka is great. There’s at least two different restaurants in my town that make versions so I don’t have to miss this food
