Every password should have more than 8 letters to be effective. Beef stew is not stroganoff.

Beef stew is not stroganoff would make a great password. Its long, has spaces and is easy to remember.

I was recently in a cafe where you had to pay in order to use the internet. I kept trying popular passwords and got in for free… The password was admin.

Doesn’t matter if someone just tries admin:admin.

Encryption only matters if you’re trying to get a password list. But admin:admin is the first try everyone uses when attempting to get into a system they’re not supposed to get into.
